Honey-Glazed Roasted Carrots with Whipped Feta and Pistachio Garnish
Ingredients:
For the roasted carrots:
- 1 kg of carrots, peeled and halved lengthwise
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon honey (optional for a glaze)
For the whipped feta sauce:
- 200 grams feta cheese
- 100 ml heavy cream
- 1 clove garlic, minced
- Salt and pepper to taste
For garnishing:
- A handful of chopped pistachios
- Fresh herbs (such as parsley or dill), finely chopped
- Sesame seeds
- A drizzle of olive oil
Instructions:
Roasting the carrots:
- Preheat your oven to 200°C (400°F).
- Toss the carrots in olive oil, salt, and pepper. Arrange them in a single layer on a baking sheet.
- Roast in the oven for 25-30 minutes or until tender and slightly caramelized. If you like a glaze, brush with honey 5 minutes before the end of roasting.
Making the whipped feta sauce:
- In a blender or food processor, blend the feta cheese, heavy cream, garlic, salt, and pepper until smooth and creamy.
Assembling the dish:
- Spread the whipped feta sauce on the bottom of a serving dish.
- Arrange the roasted carrots on top of the sauce.
- Garnish with chopped pistachios, fresh herbs, sesame seeds, and a drizzle of olive oil.
