Hot Nashville Chicken
Ingredients:
4-5 pounds bone-in chicken pieces (drum, wings, halved breast and/or thigh, ground beef) vegetable oil for frying

2 cups buttermilk
1 1 . Chili powder
2 teaspoons McCormick® pepper
1 teaspoon McCormick® dried oregano
1 teaspoon McCormick® dried ground pepper
1 teaspoon McCormick® cayenne pepper
BUTTERMARK EGG WASH
2 eggs
1 cup butter sauce
WEEKLY REFRESHMENT
3 1/2 cups all-purpose flour
1 tablespoon baking powder
Remaining rubies (in directions)
NASHVILLE HOT SAUCE
2 tablespoons hot sauce
2 tablespoons butter, melted
1 tablespoon McCormick® cayenne pepper
2 tablespoons brown sugar
1 teaspoon spice Rub (directions)
1/2 teaspoon McCormick® Smoked Paprika
3/4 cup vegetable oil
Directions:
Combine all ingredients for the
Spice Rub in a small bowl. Spread 1 ½ tablespoons of Spice Rub on a large plate with 2 cups buttermilk and 2 bay leaves. Add the chicken and mix. Cover and refrigerate for 3 hours to overnight.
When ready to cook, spoon 1 tablespoon Spice Rub into a medium bowl with your Nashville hot sauce. Stir in all remaining Nashville hot ingredients except oil (oil will look different and better).
Prepare Your Buttermilk Egg Wash Beat 2 eggs with 1 cup and ¼ cup buttermilk in a medium saucepan.
Prepare the bread dough by sifting 3 ½ cups of flour, 1 tablespoon of baking powder, and the remaining Spice Rub into a large bowl.
Working with 1 piece of chicken at a time, dredge chicken in flour, shake off excess, cover with buttermilk, shake off excess, then dredge again in flour, shake off excess, and place chicken on baking sheet. Repeat until all chicken is coated.
Add vegetable oil to the pan until the oil reaches 7 cm. Heat over medium heat until the oil reaches 375 degrees Fahrenheit. Add 3-4 pieces of chicken to the pan in a single layer, cover and cook for 7 minutes. The chicken reaches a temperature of about 160 degrees for dark meat, about 5-7 minutes. Remove the fried chicken from the paper posted on page . Repeat the process until all the chicken is cooked.
Meanwhile, for your Nashville Hot Sauce, whisk the melted butter until smooth. Let the chicken cool slightly and spread the sauce of your choice on it. You can adjust the flavor of your chicken by adding more or less Nashville Hot Sauce.
