Italian Pasta Salad

Italian Pasta Salad
Ingredients:
- 1 lb (450g) tricolor rotini pasta
- 1 cup cherry tomatoes, halved
- 1 cup cubed cheddar cheese
- 1/2 cup red onion, finely chopped
- 1/2 cup red bell pepper, diced
- 1/2 cup green bell pepper, diced (optional)
- 1 cup pepperoni slices
- 1 cup salami, sliced or chopped
- 1/2 cup black olives, sliced (optional)
- 1/2 cup mozzarella cheese, cubed (optional)
- 1/2 cup Italian dressing (store-bought or homemade)
- Salt and pepper to taste
- 1 teaspoon Italian seasoning
Instructions:
- Cook the Pasta:
- Bring a large pot of salted water to a boil. Add the tricolor rotini pasta and cook according to the package instructions until al dente. Drain the pasta and rinse under cold water to cool it down. Set aside.
- Prepare the Ingredients:
- While the pasta is cooking, chop the cherry tomatoes, red onion, bell peppers, and any other vegetables you want to add.
- Combine Ingredients:
- In a large mixing bowl, combine the cooked and cooled pasta, cherry tomatoes, cheddar cheese, red onion, bell peppers, pepperoni, salami, and any other optional ingredients you’re using.
- Add Dressing:
- Pour the Italian dressing over the salad ingredients. Add Italian seasoning, and salt, and pepper to taste. Toss everything together until well combined.
- Chill:
- Cover the pasta salad and refrigerate for at least 1 hour to allow the flavors to meld together.
- Serve:
- Before serving, give the salad a quick toss and taste for seasoning. Add more dressing, salt, or pepper if needed.
- Garnish:
- If desired, garnish with fresh basil or parsley before serving.
