Italian Pasta Salad

 

Ingredients:

  • 1 lb (450g) tricolor rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cubed cheddar cheese
  • 1/2 cup red onion, finely chopped
  • 1/2 cup red bell pepper, diced
  • 1/2 cup green bell pepper, diced (optional)
  • 1 cup pepperoni slices
  • 1 cup salami, sliced or chopped
  • 1/2 cup black olives, sliced (optional)
  • 1/2 cup mozzarella cheese, cubed (optional)
  • 1/2 cup Italian dressing (store-bought or homemade)
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning

Instructions:

  1. Cook the Pasta:
    • Bring a large pot of salted water to a boil. Add the tricolor rotini pasta and cook according to the package instructions until al dente. Drain the pasta and rinse under cold water to cool it down. Set aside.
  2. Prepare the Ingredients:
    • While the pasta is cooking, chop the cherry tomatoes, red onion, bell peppers, and any other vegetables you want to add.
  3. Combine Ingredients:
    • In a large mixing bowl, combine the cooked and cooled pasta, cherry tomatoes, cheddar cheese, red onion, bell peppers, pepperoni, salami, and any other optional ingredients you’re using.
  4. Add Dressing:
    • Pour the Italian dressing over the salad ingredients. Add Italian seasoning, and salt, and pepper to taste. Toss everything together until well combined.
  5. Chill:
    • Cover the pasta salad and refrigerate for at least 1 hour to allow the flavors to meld together.
  6. Serve:
    • Before serving, give the salad a quick toss and taste for seasoning. Add more dressing, salt, or pepper if needed.
  7. Garnish:
    • If desired, garnish with fresh basil or parsley before serving.
