Jalapeño Popper Chicken Roll-Ups

- Prepare the Filling:
- In a medium bowl, mix the softened cream cheese and shredded cheddar cheese until well combined.
- Assemble the Roll-Ups:
- Spread a generous amount of the cream cheese mixture over each chicken breast.
- Place a few slices of jalapeños on top of the cream cheese mixture.
- Roll up each chicken breast tightly, starting from one end, and secure with toothpicks if necessary.
- Bread the Chicken:
- In a shallow bowl, combine the panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, salt, and pepper.
- Dip each chicken roll-up into the beaten eggs, then coat with the breadcrumb mixture, pressing lightly to adhere.
- Bake the Roll-Ups:
- Place the breaded chicken roll-ups in a greased baking dish.
- If using, brush the tops with BBQ sauce for added flavor.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the breading is golden brown.
- Add Mozzarella:
- In the last 5 minutes of baking, sprinkle shredded mozzarella cheese over the top of the chicken roll-ups.
- Continue baking until the cheese is melted and bubbly.
- Serve:
- Remove from the oven and let the roll-ups rest for a few minutes before slicing.
- Serve hot, garnished with extra jalapeño slices or chopped parsley if desired.
