Key Lime Bars
Ingredients:
For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
For the Filling:
- 1 can (14 oz) sweetened condensed milk
- 4 large egg yolks
- 1/2 cup key lime juice (fresh or bottled)
- 1 tablespoon key lime zest
For the Topping:
- 1 cup heavy whipping cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- Optional: Green food coloring for a light green hue
- Lime zest or crushed nuts for garnish
Instructions:
- Prepare the Crust:
- Preheat your oven to 350°F (175°C).
- In a medium bowl, combine the graham cracker crumbs and granulated sugar.
- Add the melted butter and mix until well combined.
- Press the mixture firmly into the bottom of a 9×13-inch baking dish.
- Bake for 8-10 minutes until lightly golden. Let it cool slightly.
- Prepare the Filling:
- In a large bowl, whisk together the sweetened condensed milk and egg yolks until smooth.
- Add the key lime juice and zest, and continue to whisk until well combined.
- Pour the filling over the slightly cooled crust and spread evenly.
- Bake the Bars:
- Bake in the preheated oven for 15-20 minutes, or until the filling is set but still slightly jiggly in the center.
- Remove from the oven and let cool to room temperature, then refrigerate for at least 2 hours to chill completely.
- Prepare the Topping:
- In a large bowl, whip the heavy cream, powdered sugar, and vanilla extract together until stiff peaks form.
- If desired, add a few drops of green food coloring and mix until the color is evenly distributed.
- Spread the whipped cream evenly over the chilled key lime filling.
- Garnish and Serve:
- Garnish with additional lime zest or crushed nuts if desired.
- Cut into squares and serve chilled.
