Layered Vegetable Bake Recipe

 

 

 

Ingredients:

  • 2 large eggplants, sliced into rounds
  • 2 large potatoes, sliced into rounds
  • Olive oil, for brushing
  • Salt and pepper, to taste
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano

Directions:

  1. Preheat Oven & Prepare Vegetables:
    • Preheat your oven to 400°F (200°C).
    • Brush the sliced eggplants and potatoes with olive oil and season with salt and pepper.
    • Arrange on baking sheets in a single layer and bake for 20-25 minutes, flipping halfway through, until they are slightly golden and softened.
  2. Assemble the Bake:
    • In a large baking dish, spread a thin layer of marinara sauce.
    • Arrange a layer of baked eggplant slices, followed by a layer of potatoes.
    • Sprinkle some of the mozzarella and Parmesan cheeses, and a little of the basil and oregano.
    • Repeat the layering process until all ingredients are used, finishing with a layer of cheese on top.
  3. Bake:
    • Cover with foil and bake in the preheated oven for 20 minutes.
    • Remove the foil and continue baking for another 10-15 minutes or until the cheese is bubbly and golden brown.
  4. Serve:
    • Let the bake rest for 10 minutes before serving. This allows the layers to set, making it easier to serve.
    • Garnish with fresh basil or parsley if desired.

This comforting dish is perfect for a hearty dinner and can be easily adapted to include other vegetables like zucchini or bell peppers. Enjoy your homemade vegetable bake!
