Layered Vegetable Bake Recipe
Ingredients:
- 2 large eggplants, sliced into rounds
- 2 large potatoes, sliced into rounds
- Olive oil, for brushing
- Salt and pepper, to taste
- 2 cups marinara sauce
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
Directions:
- Preheat Oven & Prepare Vegetables:
- Preheat your oven to 400°F (200°C).
- Brush the sliced eggplants and potatoes with olive oil and season with salt and pepper.
- Arrange on baking sheets in a single layer and bake for 20-25 minutes, flipping halfway through, until they are slightly golden and softened.
- Assemble the Bake:
- In a large baking dish, spread a thin layer of marinara sauce.
- Arrange a layer of baked eggplant slices, followed by a layer of potatoes.
- Sprinkle some of the mozzarella and Parmesan cheeses, and a little of the basil and oregano.
- Repeat the layering process until all ingredients are used, finishing with a layer of cheese on top.
- Bake:
- Cover with foil and bake in the preheated oven for 20 minutes.
- Remove the foil and continue baking for another 10-15 minutes or until the cheese is bubbly and golden brown.
- Serve:
- Let the bake rest for 10 minutes before serving. This allows the layers to set, making it easier to serve.
- Garnish with fresh basil or parsley if desired.
