Lemon Cheesecake Recipe

 

Ingredients:

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the Cheesecake Filling:

  • 32 oz (4 packages) cream cheese, softened
  • 1 1/4 cups granulated sugar
  • 1/4 cup sour cream
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 4 large eggs

For the Lemon Topping:

  • 1 cup sour cream
  • 2 tablespoons powdered sugar
  • 1 tablespoon lemon juice
  • Lemon slices, for garnish

  1. Prepare the Crust: Preheat your oven to 325°F (163°C). In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly moistened. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then set aside to cool.
  2. Make the Cheesecake Filling: In a large bowl, beat the softened cream cheese and granulated sugar until smooth and creamy. Add the sour cream, lemon juice, lemon zest, and vanilla extract, and mix until well combined. Add the eggs one at a time, beating on low speed after each addition just until combined. Do not overmix.
  3. Bake the Cheesecake: Pour the cheesecake filling over the cooled crust. Place the springform pan in a larger roasting pan and add hot water to the roasting pan until it comes halfway up the sides of the springform pan. This water bath helps prevent cracks in the cheesecake. Bake for 60-70 minutes, or until the center is almost set but still slightly jiggly.
  4. Cool the Cheesecake: Turn off the oven and leave the cheesecake inside with the oven door slightly open for 1 hour. This gradual cooling helps prevent cracks. Remove the cheesecake from the oven and the water bath. Run a knife around the edge of the pan to loosen the cheesecake and let it cool to room temperature. Refrigerate for at least 4 hours, preferably overnight.
  5. Prepare the Lemon Topping: In a small bowl, mix the sour cream, powdered sugar, and lemon juice until smooth. Spread the topping over the chilled cheesecake.
  6. Garnish and Serve: Garnish with lemon slices before serving. Slice and enjoy your creamy and refreshing lemon cheesecake!
