Lemon Crinkle Cookies Recipe
Ingredients:
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 2 tablespoons freshly squeezed lemon juice
- 1 tablespoon lemon zest
- 1/2 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup powdered sugar (for rolling)
Instructions:
- Preheat the Oven:
- Preheat your oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
- Cream the Butter and Sugar:
- In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy.
- Add Wet Ingredients:
- Beat in the eggs, one at a time.
- Add the lemon juice, lemon zest, and vanilla extract, mixing until combined.
- Mix Dry Ingredients:
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms.
- Chill the Dough:
- Cover the dough and refrigerate for about 30 minutes. This helps make it easier to handle.
- Roll the Cookies:
- Scoop out tablespoon-sized portions of dough and roll them into balls.
- Roll each ball in powdered sugar until completely coated.
- Bake the Cookies:
- Place the coated dough balls on the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the cookies are set and the tops have crinkles.
- Cool and Serve:
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
