Lemon Crinkle Cookies Recipe

 

 

 

Ingredients:

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup powdered sugar (for rolling)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C).
    • Line a baking sheet with parchment paper.
  2. Cream the Butter and Sugar:
    • In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy.
  3. Add Wet Ingredients:
    • Beat in the eggs, one at a time.
    • Add the lemon juice, lemon zest, and vanilla extract, mixing until combined.
  4. Mix Dry Ingredients:
    • In a separate bowl, whisk together the flour, baking powder, and salt.
    • Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms.
  5. Chill the Dough:
    • Cover the dough and refrigerate for about 30 minutes. This helps make it easier to handle.
  6. Roll the Cookies:
    • Scoop out tablespoon-sized portions of dough and roll them into balls.
    • Roll each ball in powdered sugar until completely coated.
  7. Bake the Cookies:
    • Place the coated dough balls on the prepared baking sheet, spacing them about 2 inches apart.
    • Bake for 10-12 minutes, or until the cookies are set and the tops have crinkles.
  8. Cool and Serve:
    • Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
