Lemon Garlic Butter Chicken Thighs with Green Beans
Ingredients:
- 6 boneless, skinless chicken thighs
- 1 lb (450 g) green beans, trimmed
- 3 tablespoons olive oil
- 3 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Juice of 1 lemon
- Lemon slices for garnish
- Fresh parsley, chopped for garnish
Instructions:
- Prepare the Chicken:
- Pat the chicken thighs dry with paper towels.
- In a small bowl, mix together the paprika, thyme, oregano, salt, and pepper. Rub this spice mixture all over the chicken thighs.
- Cook the Chicken:
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
- Add the chicken thighs to the skillet and cook for 5-6 minutes per side, or until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.
- Prepare the Green Beans:
- In the same skillet, add the remaining tablespoon of olive oil and the green beans.
- Sauté the green beans for about 5 minutes, or until they start to become tender.
- Add Garlic and Butter:
- Push the green beans to one side of the skillet and add the butter to the other side.
- Once the butter has melted, add the minced garlic and cook for about 1 minute, until fragrant.
- Combine and Add Lemon:
- Return the chicken thighs to the skillet, nestling them among the green beans.
- Pour the lemon juice over the chicken and green beans.
- Cook for an additional 2-3 minutes, allowing the flavors to meld together.
- Garnish and Serve:
- Garnish the dish with fresh parsley and lemon slices.
- Serve hot and enjoy!
