Lemon Garlic Chicken and Green Beans Recipe

 

 

 

Ingredients:

  • 6 boneless, skinless chicken thighs
  • 500g fresh green beans, trimmed
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 lemon, juice and zest
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • Fresh parsley, chopped for garnish

Instructions:

  1. Prep the Chicken:
    • In a bowl, combine lemon juice, zest, garlic, oregano, basil, salt, and pepper. Add the chicken thighs and marinate for at least 30 minutes in the refrigerator.
  2. Cook Chicken:
    • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the chicken thighs and cook for 6-7 minutes on each side, or until golden brown and cooked through. Remove from the skillet and set aside.
  3. Sauté Green Beans:
    • In the same skillet, add the remaining olive oil. Add the green beans and sauté for about 4-5 minutes, or until they are tender but still crisp. Season with a little salt and pepper.
  4. Combine and Serve:
    • Return the chicken to the skillet with the green beans. Cook together for another 2-3 minutes to allow the flavors to meld. Garnish with chopped parsley and lemon slices before serving.
