Luscious Lemon Cream Layer Cake

Ingredients:

For the Cake:

  • 2 1/2 cups all-purpose flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 cups granulated sugar
  • 1/2 cup butter, softened
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup milk
  • Zest of 1 lemon

For the Lemon Cream Filling:

  • 1 cup heavy cream
  • 1/2 cup lemon curd
  • 1/4 cup powdered sugar

For the Frosting:

  • 1 cup butter, softened
  • 4 cups powdered sugar
  • 1/4 cup heavy cream
  • 1 tsp vanilla extract
  • 2 tbsp lemon juice

Garnish:

  • Lemon slices
  • Fresh mint leaves

Instructions:

Making the Cake:

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Mix dry ingredients: In a bowl, combine flour, baking powder, and salt.
  3. Cream butter and sugar: In another bowl, beat the sugar and butter until light and fluffy. Add eggs one at a time, then stir in vanilla and lemon zest.
  4. Combine: Alternately add the dry ingredients and milk to the butter mixture, starting and ending with the dry ingredients. Mix until just combined.
  5. Bake: Divide the batter evenly between the prepared pans. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Cool in pans for 10 minutes, then turn out onto wire racks to cool completely.

Making the Lemon Cream Filling:

  1. Whip the cream: In a mixing bowl, whip the heavy cream and powdered sugar until stiff peaks form. Gently fold in the lemon curd.

Making the Frosting:

  1. Prepare frosting: In a large bowl, beat the softened butter until creamy. Gradually add powdered sugar, heavy cream, vanilla, and lemon juice, beating until smooth and spreadable.

Assembly:

  1. Layer and fill: Place one cake layer on your serving plate. Spread the lemon cream filling over the top, then cover with the second cake layer.
  2. Frost the cake: Spread the frosting over the top and sides of the cake. Smooth out for a clean look or use a piping bag and tip for a more decorative finish.
  3. Garnish: Decorate with lemon slices and fresh mint leaves.
