Luscious Lemon Custard Pie

Ingredients:

For the crust:

  • 1 pre-made pie crust (or make your own using your favorite recipe)

For the filling:

  • 1 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1 1/2 cups whole milk
  • 1/4 cup freshly squeezed lemon juice (about 1-2 lemons)
  • 1 teaspoon lemon zest
  • Optional: 1 tablespoon melted butter for added richness

For garnish:

  • Whipped cream
  • Lemon slices or zest

Instructions:

  1. Preheat the oven: Preheat your oven to 375°F (190°C).
  2. Prepare the crust: Roll out your pie crust into a 9-inch pie pan, crimping the edges if desired. Set it aside.
  3. Make the filling:
    • In a medium mixing bowl, whisk together the sugar, flour, and salt.
    • Add the eggs, one at a time, and whisk until smooth.
    • Stir in the milk, lemon juice, lemon zest, and melted butter (if using) until well combined.
  4. Pour the filling: Pour the filling mixture into the prepared pie crust. The mixture will be liquidy, but it will set as it bakes.
  5. Bake the pie: Place the pie in the preheated oven and bake for 35-45 minutes, or until the filling is set and lightly golden on top. A knife inserted near the center should come out clean.
  6. Cool: Allow the pie to cool at room temperature for about 2 hours. For a chilled pie, place it in the refrigerator for at least 1 hour before serving.
  7. Serve and garnish: Slice the pie and serve with a dollop of whipped cream and a lemon wedge or zest for garnish.
