Luxurious French Onion Soup with Cheesy Bacon Toast
Ingredients:
For the French Onion Soup:
- 4 large onions, thinly sliced
- 2 cloves of garlic, minced
- 4 cups of beef broth
- 1/2 cup of dry white wine
- 2 tablespoons of butter
- 1 teaspoon of sugar
- 1 bay leaf
- Fresh thyme
- Salt and pepper to taste
For the Cheesy Bacon Toast:
- 4 slices of thick crusty bread
- 8 slices of cooked bacon
- 1 cup of grated Gruyère cheese
- 1 cup of sautéed mushrooms
- Fresh parsley, chopped
Instructions:
- Make the Soup:
- In a large pot, melt the butter over medium heat. Add the sliced onions and cook, stirring frequently, until they are caramelized and golden brown, about 20-25 minutes. Sprinkle with sugar halfway through to help with caramelization.
- Add the garlic and cook for another 2 minutes.
- Pour in the white wine and let it reduce slightly, then add the beef broth, bay leaf, and a few sprigs of thyme. Season with salt and pepper.
- Bring to a simmer and cook uncovered for about 30 minutes.
- Prepare the Cheesy Bacon Toast:
- Preheat your oven’s broiler.
- Place the slices of bread on a baking sheet. Distribute the sautéed mushrooms evenly over the bread slices, then cover each with grated Gruyère cheese.
- Place under the broiler until the cheese is melted and bubbly, about 3-5 minutes.
- Remove from the oven and immediately top each slice with two strips of crispy bacon and a sprinkle of chopped parsley.
- Serve:
- Ladle the hot soup into bowls. Carefully place a slice of the cheesy bacon toast on top of each bowl of soup.
- Serve immediately, enjoying the melty cheese and the rich, savory depth of the soup enhanced by the crispness of the bacon.
