Mango Custard Pudding

 

Ingredients:

  • 3 ripe mangoes, peeled and diced
  • 2 cups milk
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions:

  1. Prepare the Mangoes:
    • Peel and dice the mangoes. Set aside.
  2. Mix the Custard Base:
    • In a large saucepan, combine the milk, heavy cream, and sugar. Heat over medium heat until the sugar dissolves and the mixture is warm.
  3. Thicken the Custard:
    • In a small bowl, mix the cornstarch with a little bit of cold milk to create a slurry.
    • Gradually add the cornstarch slurry to the warm milk mixture, stirring constantly to avoid lumps.
    • Continue to cook over medium heat, stirring constantly, until the mixture thickens to a custard-like consistency.
  4. Add Flavor:
    • Remove from heat and stir in the vanilla extract and a pinch of salt.
  5. Combine with Mangoes:
    • Fold the diced mangoes into the custard mixture until evenly distributed.
  6. Set the Dessert:
    • Pour the mixture into a large glass dish or individual serving dishes.
    • Allow it to cool to room temperature, then refrigerate for at least 2 hours or until fully set.
  7. Serve:
    • Once set, cut into squares and serve chilled.
