Mango Custard Pudding
Ingredients:
- 3 ripe mangoes, peeled and diced
- 2 cups milk
- 1 cup heavy cream
- 1/2 cup sugar
- 1/4 cup cornstarch
- 1 teaspoon vanilla extract
- A pinch of salt
Instructions:
- Prepare the Mangoes:
- Peel and dice the mangoes. Set aside.
- Mix the Custard Base:
- In a large saucepan, combine the milk, heavy cream, and sugar. Heat over medium heat until the sugar dissolves and the mixture is warm.
- Thicken the Custard:
- In a small bowl, mix the cornstarch with a little bit of cold milk to create a slurry.
- Gradually add the cornstarch slurry to the warm milk mixture, stirring constantly to avoid lumps.
- Continue to cook over medium heat, stirring constantly, until the mixture thickens to a custard-like consistency.
- Add Flavor:
- Remove from heat and stir in the vanilla extract and a pinch of salt.
- Combine with Mangoes:
- Fold the diced mangoes into the custard mixture until evenly distributed.
- Set the Dessert:
- Pour the mixture into a large glass dish or individual serving dishes.
- Allow it to cool to room temperature, then refrigerate for at least 2 hours or until fully set.
- Serve:
- Once set, cut into squares and serve chilled.
