Meatloaf Cupcakes with Mashed Potato Frosting
Ingredients:
For the Meatloaf:
- 1 lb (450g) ground beef π₯©
- 1/2 cup breadcrumbs π
- 1/4 cup milk π₯
- 1/4 cup ketchup π
- 1 small onion, finely chopped π§
- 1 clove garlic, minced π§
- 1 large egg π₯
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon salt π§
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried oregano πΏ
For the Mashed Potato Frosting:
- 2 large potatoes, peeled and cubed π₯
- 2 tablespoons butter π§
- 1/4 cup milk π₯
- 1/4 teaspoon salt π§
- 1/4 teaspoon black pepper
- 1/4 cup shredded cheddar cheese π§ (optional)
- Fresh chives for garnish π±
Instructions:
- Preheat the oven to 375Β°F (190Β°C). Grease a muffin tin.
- Prepare the meatloaf mixture: In a bowl, combine ground beef, breadcrumbs, milk, ketchup, onion, garlic, egg, Worcestershire sauce, salt, pepper, and oregano. Mix well.
- Fill the muffin tin: Divide the mixture evenly into the muffin cups, pressing gently.
- Bake: Place in the oven and bake for 20-25 minutes or until cooked through. Let cool slightly.
- Make the mashed potatoes: Boil potatoes in salted water until tender, about 15 minutes. Drain and mash with butter, milk, salt, and pepper until smooth.
- Pipe the “frosting”: Transfer mashed potatoes to a piping bag and swirl them onto each meatloaf cupcake.
- Garnish & Serve: Sprinkle with cheddar cheese and chives. Serve warm!
