Meatloaf Cupcakes with Mashed Potato Frosting

 

Ingredients:

For the Meatloaf:
  • 1 lb (450g) ground beef 🥩
  • 1/2 cup breadcrumbs 🍞
  • 1/4 cup milk 🥛
  • 1/4 cup ketchup 🍅
  • 1 small onion, finely chopped 🧅
  • 1 clove garlic, minced 🧄
  • 1 large egg 🥚
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon salt 🧂
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano 🌿
For the Mashed Potato Frosting:
  • 2 large potatoes, peeled and cubed 🥔
  • 2 tablespoons butter 🧈
  • 1/4 cup milk 🥛
  • 1/4 teaspoon salt 🧂
  • 1/4 teaspoon black pepper
  • 1/4 cup shredded cheddar cheese 🧀 (optional)
  • Fresh chives for garnish 🌱

Instructions:

  1. Preheat the oven to 375°F (190°C). Grease a muffin tin.
  2. Prepare the meatloaf mixture: In a bowl, combine ground beef, breadcrumbs, milk, ketchup, onion, garlic, egg, Worcestershire sauce, salt, pepper, and oregano. Mix well.
  3. Fill the muffin tin: Divide the mixture evenly into the muffin cups, pressing gently.
  4. Bake: Place in the oven and bake for 20-25 minutes or until cooked through. Let cool slightly.
  5. Make the mashed potatoes: Boil potatoes in salted water until tender, about 15 minutes. Drain and mash with butter, milk, salt, and pepper until smooth.
  6. Pipe the “frosting”: Transfer mashed potatoes to a piping bag and swirl them onto each meatloaf cupcake.
  7. Garnish & Serve: Sprinkle with cheddar cheese and chives. Serve warm!

💡 Tip: Add a drizzle of extra ketchup on top for a fun “icing” effect!
