Freshly Baked Muffins

2 cups all-purpose flour
1/2 cup sugar
1 tbsp baking powder
1/2 tsp salt
3/4 cup milk

1/3 cup vegetable oil
1 tsp vanilla extract
1 large egg
1/2 cup chocolate chips or berries (optional)
Preheat oven to 375°F (190°C). Line a muffin tin with paper liners or grease it lightly.

Mix dry ingredients: In a large bowl, whisk together flour, sugar, baking powder, and salt.
Combine wet ingredients: In another bowl, whisk milk, oil, vanilla extract, and egg until smooth.
Blend batter: Gradually add the wet ingredients to the dry, stirring gently until just combined. Avoid overmixing.
Add extras: Fold in chocolate chips or berries if using.
Fill muffin cups: Divide the batter evenly among the muffin cups, filling each about ¾ full.

Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.
Cool & serve: Let muffins cool in the pan for 5 minutes, then transfer to a wire rack. Enjoy warm or at room temperature!
