Ingredients:

  • 1 lb lean ground beef or ground turkey
  • 1/2 cup finely chopped onion
  • 1/3 cup almond flour
  • 1 egg
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup low-sugar ketchup
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, combine ground meat, onion, almond flour, egg, garlic, salt, and pepper.
  3. Press the meat mixture into the cups of a muffin tin, filling each to the top.
  4. Spoon a small amount of ketchup over each meatloaf cup.
  5. Bake for 25 minutes or until the meat is cooked through.
  6. Garnish with fresh parsley before serving.

Ingredients:

  • 1 lb lean ground beef
  • 1/2 cup breadcrumbs (use whole grain for a healthier option)
  • 1/4 cup milk
  • 1 egg
  • 1/2 cup finely chopped herbs (parsley, cilantro, dill)
  • Salt and pepper, to taste
  • Puff pastry sheet (look for a lower-fat version)

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Mix ground beef, breadcrumbs, milk, egg, herbs, salt, and pepper in a bowl until well combined.
  3. Roll out the puff pastry into a rectangle. Spread the meat mixture evenly over the pastry, leaving a small margin at the edges.
  4. Roll the pastry over the meat, sealing the edges with a little water.
  5. Place the roll on a baking sheet with the seam side down.
  6. Brush the top with a beaten egg for a golden finish.
  7. Bake for 35-40 minutes or until the pastry is puffed and golden.
  8. Slice and serve.
