Moist Spice Cake with Raisins
Ingredients:
For the Cake:
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground ginger
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar, packed
- 3 large eggs
- 1 cup applesauce
- 1/2 cup buttermilk
- 1 teaspoon vanilla extract
- 1 cup raisins
For the Glaze:
- 1/2 cup brown sugar, packed
- 1/4 cup unsalted butter
- 1/4 cup heavy cream
- 1 teaspoon vanilla extract
Instructions:
- Prepare the Cake:
- Preheat the oven to 350°F (175°C).
- Grease and flour a 9-inch springform pan.
- In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, and ginger. Set aside.
- In a large bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition.
- Mix in the applesauce, buttermilk, and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet mixture, mixing just until combined.
- Fold in the raisins.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake the Cake:
- Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from the oven and let the cake cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
- Prepare the Glaze:
- In a small saucepan, combine the brown sugar, butter, and heavy cream.
- Cook over medium heat, stirring constantly, until the mixture comes to a boil.
- Boil for 1 minute, then remove from heat and stir in the vanilla extract.
- Allow the glaze to cool slightly before pouring it over the cooled cake.
- Serve:
- Pour the warm glaze over the cooled cake, allowing it to drip down the sides.
- Let the glaze set before slicing and serving.
