No-Bake Cheesecake with Mixed Berry Topping

 

Ingredients:

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the Cheesecake Filling:

  • 3 (8 oz) packages cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream, cold

For the Berry Topping:

  • 1 cup raspberries
  • 1 cup blackberries
  • 1 cup red currants (or other berries of choice)
  • 1/2 cup granulated sugar
  • 1/4 cup water
  • 1 tablespoon lemon juice
  • 2 teaspoons cornstarch mixed with 2 teaspoons water (optional, for thickening)
  • Fresh mint leaves for garnish (optional)
  • Powdered sugar for dusting (optional)

Instructions:

  1. Prepare the Crust:
    • In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter.
    • Press the mixture evenly into the bottom of a 9-inch springform pan.
    • Place in the refrigerator to set while preparing the filling.
  2. Prepare the Cheesecake Filling:
    • In a large bowl, beat the cream cheese until smooth and creamy.
    • Add the powdered sugar and vanilla extract, and beat until well combined.
    • In a separate bowl, whip the cold heavy cream until stiff peaks form.
    • Gently fold the whipped cream into the cream cheese mixture until well combined.
    • Spread the cheesecake filling evenly over the prepared crust.
    • Refrigerate for at least 4 hours or until firm.
  3. Prepare the Berry Topping:
    • In a medium saucepan, combine the granulated sugar, water, and lemon juice. Cook over medium heat until the sugar is dissolved.
    • Add the raspberries, blackberries, and red currants (or other berries) to the saucepan. Cook for about 5 minutes until the berries release their juices.
    • If a thicker sauce is desired, add the cornstarch mixture to the saucepan and cook for an additional 1-2 minutes until thickened.
    • Remove from heat and let cool completely.
  4. Assemble and Serve:
    • Once the cheesecake is set, remove it from the springform pan and place it on a serving plate.
    • Spoon the berry topping over the cheesecake, allowing some to drip down the sides.
    • Garnish with fresh mint leaves and a dusting of powdered sugar, if desired.
