No-Bake Cheesecake with Mixed Berry Topping
Ingredients:
For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
For the Cheesecake Filling:
- 3 (8 oz) packages cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy cream, cold
For the Berry Topping:
- 1 cup raspberries
- 1 cup blackberries
- 1 cup red currants (or other berries of choice)
- 1/2 cup granulated sugar
- 1/4 cup water
- 1 tablespoon lemon juice
- 2 teaspoons cornstarch mixed with 2 teaspoons water (optional, for thickening)
- Fresh mint leaves for garnish (optional)
- Powdered sugar for dusting (optional)
Instructions:
- Prepare the Crust:
- In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter.
- Press the mixture evenly into the bottom of a 9-inch springform pan.
- Place in the refrigerator to set while preparing the filling.
- Prepare the Cheesecake Filling:
- In a large bowl, beat the cream cheese until smooth and creamy.
- Add the powdered sugar and vanilla extract, and beat until well combined.
- In a separate bowl, whip the cold heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until well combined.
- Spread the cheesecake filling evenly over the prepared crust.
- Refrigerate for at least 4 hours or until firm.
- Prepare the Berry Topping:
- In a medium saucepan, combine the granulated sugar, water, and lemon juice. Cook over medium heat until the sugar is dissolved.
- Add the raspberries, blackberries, and red currants (or other berries) to the saucepan. Cook for about 5 minutes until the berries release their juices.
- If a thicker sauce is desired, add the cornstarch mixture to the saucepan and cook for an additional 1-2 minutes until thickened.
- Remove from heat and let cool completely.
- Assemble and Serve:
- Once the cheesecake is set, remove it from the springform pan and place it on a serving plate.
- Spoon the berry topping over the cheesecake, allowing some to drip down the sides.
- Garnish with fresh mint leaves and a dusting of powdered sugar, if desired.
