No-Bake Pineapple Cheesecake
Ingredients:
For the Crust:
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
For the Cheesecake Filling:
- 2 packages (16 oz) cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 1 can (20 oz) crushed pineapple, drained well
For the Topping:
- Fresh pineapple chunks (optional)
- Whipped cream (optional)
Instructions:
- Prepare the Crust:
- In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar.
- Press the mixture evenly into the bottom of a 9-inch springform pan.
- Refrigerate the crust while you prepare the filling.
- Prepare the Cheesecake Filling:
- In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
- Add the granulated sugar and vanilla extract, and continue to beat until well combined.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
- Fold in the well-drained crushed pineapple.
- Assemble the Cheesecake:
- Pour the cheesecake filling over the chilled crust, spreading it evenly.
- Smooth the top with a spatula.
- Cover the cheesecake with plastic wrap and refrigerate for at least 4 hours, or until set. For best results, refrigerate overnight.
- Serve:
- Before serving, run a knife around the edge of the cheesecake to loosen it from the pan, then remove the sides of the springform pan.
- Top with fresh pineapple chunks and whipped cream, if desired.
- Slice and serve chilled.
