No-Bake Pineapple Cheesecake

 

Ingredients:

For the Crust:

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar

For the Cheesecake Filling:

  • 2 packages (16 oz) cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1 can (20 oz) crushed pineapple, drained well

For the Topping:

  • Fresh pineapple chunks (optional)
  • Whipped cream (optional)

Instructions:

  1. Prepare the Crust:
    • In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar.
    • Press the mixture evenly into the bottom of a 9-inch springform pan.
    • Refrigerate the crust while you prepare the filling.
  2. Prepare the Cheesecake Filling:
    • In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
    • Add the granulated sugar and vanilla extract, and continue to beat until well combined.
    • In a separate bowl, whip the heavy cream until stiff peaks form.
    • Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
    • Fold in the well-drained crushed pineapple.
  3. Assemble the Cheesecake:
    • Pour the cheesecake filling over the chilled crust, spreading it evenly.
    • Smooth the top with a spatula.
    • Cover the cheesecake with plastic wrap and refrigerate for at least 4 hours, or until set. For best results, refrigerate overnight.
  4. Serve:
    • Before serving, run a knife around the edge of the cheesecake to loosen it from the pan, then remove the sides of the springform pan.
    • Top with fresh pineapple chunks and whipped cream, if desired.
    • Slice and serve chilled.
