No-Bake Strawberry Cheesecake
Ingredients:
- For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- For the Cheesecake Filling:
- 2 (8 oz) packages cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 2 cups heavy whipping cream
- For the Topping:
- 2 cups fresh strawberries, hulled and sliced
- 1/4 cup powdered sugar (for dusting)
Instructions:
- Prepare the Crust:
- In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.
- Press the mixture evenly into the bottom of a 9×13-inch baking dish. Use the back of a spoon to press it firmly. Refrigerate while preparing the filling.
- Prepare the Cheesecake Filling:
- In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
- Add the powdered sugar, vanilla extract, and lemon juice. Beat until well combined.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
- Assemble the Cheesecake:
- Spread half of the cheesecake filling over the prepared crust.
- Layer half of the sliced strawberries over the filling.
- Spread the remaining cheesecake filling over the strawberries, smoothing the top with a spatula.
- Arrange the remaining sliced strawberries on top of the cheesecake.
- Chill:
- Refrigerate the cheesecake for at least 4 hours, or until set. For best results, refrigerate overnight.
- Serve:
- Before serving, dust the top with powdered sugar.
