No-Bake Strawberry Cheesecake
Ingredients:
For the Crust:
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
For the Cheesecake Filling:
- 3 cups cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 cups heavy whipping cream, cold
- 1/4 cup powdered sugar

Instructions:
- Prepare the Crust:
- In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until the crumbs are evenly coated with butter.
- Press the mixture into the bottom of a 9-inch springform pan, pressing firmly to create an even layer. Place the crust in the refrigerator to set while you prepare the filling.
- Prepare the Cheesecake Filling:
- In a large bowl, beat the softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
- In a separate bowl, whip the cold heavy cream and powdered sugar until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until fully combined.
- Assemble the Cheesecake:
- Pour half of the cheesecake filling over the prepared crust. Spread it evenly.
- Arrange a layer of fresh strawberry halves over the filling.
- Pour the remaining cheesecake filling over the strawberries and spread it evenly.
- Chill:
- Cover the cheesecake with plastic wrap and refrigerate for at least 6 hours or overnight, until the cheesecake is firm.
- Decorate and Serve:
- Once the cheesecake is set, remove it from the springform pan and place it on a serving plate.
- Decorate the top with halved fresh strawberries, chocolate shavings, and additional whipped cream, if desired.
- Slice and serve chilled.
