Oatmeal Chocolate Chip Cookies with Nuts

 

 

 

Ingredients:

  • 1 cup unsalted butter (softened)
  • 1 cup brown sugar (packed)
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 cups old-fashioned rolled oats
  • 1 cup chocolate chips (semi-sweet or dark)
  • 1/2 cup chopped nuts (pecans or walnuts, optional)

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream Butter and Sugars: In a large bowl, beat the butter, brown sugar, and granulated sugar together until creamy and smooth.
  3. Add Wet Ingredients: Mix in the eggs one at a time, then add the vanilla extract.
  4. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry mixture to the wet mixture until well combined.
  5. Add Oats, Chocolate Chips, and Nuts: Fold in the rolled oats, chocolate chips, and nuts until evenly distributed.
  6. Shape and Place: Scoop out tablespoon-sized balls of dough and place them on the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake: Bake for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly underdone, but they will firm up as they cool.
  8. Cool: Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
