Ingredients:
1/2 cup russet mashed potatoes (chilled)
6 cups powdered sugar, with a little sugar for dusting
1/3 Cup creamy peanut butter

1 tablespoon milk
1 teaspoon vanilla extract
Pinch of salt
Steps for sweetness:
Using an electric mixer, combine mashed potatoes, milk, vanilla and salt in a spacious bowl.

Gradually stir in the powdered sugar, adding one cup at a time. Continue mixing until a firm dough forms. If it’s too sticky, sprinkle more sugar on top, one tablespoon at a time.Form the dough into a ball and roll it out into a thin rectangle measuring 25 x 30 cm and about 3 mm thick. Sprinkle lightly with powdered sugar.
Spread an even layer of peanut butter on top. Roll out the dough tightly with baking paper and place it in the freezer for an hour.
Once the roll is set, cut it into 1/4-inch wedges.To store, place the candies in an airtight container and refrigerate.
