Ingredients:

  • 1 lb Italian sausage (mild or spicy, as preferred)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 5 cups chicken broth
  • 1 can diced tomatoes (14.5 oz, with juices)
  • 1 cup heavy cream
  • 1 package refrigerated cheese tortellini (about 9 oz)
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • Salt and pepper, to taste
  • 1 cup fresh spinach, chopped (optional)
  • Fresh parsley or basil, chopped (for garnish)

Instructions:

  1. Cook the sausage: In a large pot, cook the Italian sausage over medium heat until browned. Break it into crumbles as it cooks. Remove excess grease if necessary.
  2. Sauté vegetables: Add the chopped onion and minced garlic to the pot. Cook until softened and fragrant, about 2-3 minutes.
  3. Add broth and tomatoes: Pour in the chicken broth and add the canned diced tomatoes. Stir in the dried basil and oregano. Bring the mixture to a boil.
  4. Cook tortellini: Add the tortellini to the pot and cook according to package instructions (usually 5-7 minutes).
  5. Add cream and spinach: Lower the heat and stir in the heavy cream. If using fresh spinach, stir it in and let it wilt in the hot soup.
  6. Season to taste: Add salt and pepper as needed.
  7. Serve and garnish: Serve hot, garnished with fresh parsley or basil.
