ortellini Sausage Soup Recipe
Ingredients:
- 1 lb Italian sausage (mild or spicy, as preferred)
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 5 cups chicken broth
- 1 can diced tomatoes (14.5 oz, with juices)
- 1 cup heavy cream
- 1 package refrigerated cheese tortellini (about 9 oz)
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- Salt and pepper, to taste
- 1 cup fresh spinach, chopped (optional)
- Fresh parsley or basil, chopped (for garnish)
Instructions:
- Cook the sausage: In a large pot, cook the Italian sausage over medium heat until browned. Break it into crumbles as it cooks. Remove excess grease if necessary.
- Sauté vegetables: Add the chopped onion and minced garlic to the pot. Cook until softened and fragrant, about 2-3 minutes.
- Add broth and tomatoes: Pour in the chicken broth and add the canned diced tomatoes. Stir in the dried basil and oregano. Bring the mixture to a boil.
- Cook tortellini: Add the tortellini to the pot and cook according to package instructions (usually 5-7 minutes).
- Add cream and spinach: Lower the heat and stir in the heavy cream. If using fresh spinach, stir it in and let it wilt in the hot soup.
- Season to taste: Add salt and pepper as needed.
- Serve and garnish: Serve hot, garnished with fresh parsley or basil.
