Ingredients:

  • 4 fresh peaches (ripe, peeled, and sliced)
  • 1 cup heavy whipping cream
  • 3 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup peach or strawberry jam (for layering)
  • 1 tablespoon lemon juice
  • Optional: granola or crushed cookies for a crunchy layer
  • Fresh mint leaves for garnish

Instructions:

  1. Prepare the Peaches:
    • Peel and slice the peaches into small pieces. Reserve a few slices for garnish if desired.
    • Mash half of the peach slices into a chunky puree using a fork or blender.
    • Add lemon juice to the puree to enhance the flavor.
  2. Make the Whipped Cream:
    • In a chilled bowl, whip the heavy cream with a hand mixer or whisk until soft peaks form.
    • Gradually add powdered sugar and vanilla extract, and continue whipping until stiff peaks form.
  3. Combine the Cream and Peaches:
    • Gently fold the peach puree into the whipped cream to create a light, peach-flavored cream.
  4. Layer the Parfait:
    • In a glass, start with a layer of peach cream at the bottom.
    • Add a layer of peach or strawberry jam.
    • Continue layering with peach cream and jam until the glass is filled.
    • Optionally, add granola or crushed cookies as a middle or top layer for texture.
  5. Garnish and Serve:
    • Top with reserved peach slices and a sprig of fresh mint for decoration.
    • Chill in the refrigerator for 10-15 minutes before serving for a refreshing treat
