Ingredients

For the Peach Filling:

  • 6 cups fresh peaches, peeled and sliced (or canned peaches, drained)
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon lemon juice
  • 2 teaspoons cornstarch

For the Cobbler Topping:

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons unsalted butter, chilled and cubed
  • 1/4 cup boiling water

For the Cinnamon Sugar Topping:

  • 3 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Prepare the Peach Filling:
    • Preheat your oven to 425°F (220°C).
    • In a large bowl, combine the sliced peaches, granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Mix well until the peaches are evenly coated.
    • Transfer the peach mixture to a 9×13-inch baking dish and bake in the preheated oven for 10 minutes.
  2. Prepare the Cobbler Topping:
    • In a medium bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, and salt.
    • Add the chilled butter cubes and use a pastry cutter or your fingers to cut the butter into the flour mixture until it resembles coarse crumbs.
    • Stir in the boiling water until the mixture forms a dough.
  3. Assemble the Cobbler:
    • Remove the baking dish with the peaches from the oven.
    • Drop spoonfuls of the cobbler dough over the hot peaches, spreading it out as evenly as possible.
  4. Cinnamon Sugar Topping:
    • In a small bowl, mix together the granulated sugar and cinnamon.
    • Sprinkle the cinnamon sugar evenly over the cobbler dough.
  5. Bake the Cobbler:
    • Return the baking dish to the oven and bake for an additional 25 to 30 minutes, or until the topping is golden brown and the peaches are bubbly.
  6. Serve:
    • Allow the cobbler to cool slightly before serving.
    • Serve warm, optionally with a scoop of vanilla ice cream or whipped cream.
