Peach Delight Recipe
Ingredients:
For the Crust:
- 2 cups graham cracker crumbs (about 12 full graham crackers)
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
For the Cream Layer:
- 8 oz (225g) cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup whipped topping (like Cool Whip) or whipped cream
For the Peach Layer:
- 4 cups fresh peaches, peeled and sliced (or canned peaches, drained)
- 1/4 cup granulated sugar (if using fresh peaches)
- 1 tablespoon cornstarch (optional, for thickening fresh peach juice)
- 1 tablespoon lemon juice
For the Topping:
- 2 cups whipped topping or whipped cream
- Crushed graham crackers or cookie crumbs for garnish
- Fresh mint leaves (optional, for garnish)
Instructions:
- Prepare the Crust:
- In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Stir until the mixture is well combined and resembles wet sand.
- Press the crumb mixture evenly into the bottom of a 9×13-inch (23×33 cm) baking dish. Place in the refrigerator to chill while you prepare the other layers.
- Prepare the Cream Layer:
- In a large mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- Fold in the whipped topping or whipped cream until fully combined.
- Spread the cream layer evenly over the chilled crust. Return to the refrigerator to set while you prepare the peaches.
- Prepare the Peach Layer:
- If using fresh peaches, combine the sliced peaches with granulated sugar, cornstarch (if using), and lemon juice in a medium saucepan. Cook over medium heat, stirring frequently, until the peaches are softened and the mixture thickens slightly. Allow to cool before layering.
- If using canned peaches, simply drain them well and slice them if necessary.
- Assemble the Dessert:
- Once the cream layer has set, layer the cooled peach mixture evenly over the top.
- Spread the remaining whipped topping or whipped cream over the peach layer.
- Garnish and Chill:
- Sprinkle crushed graham crackers or cookie crumbs over the top for added texture and garnish with fresh mint leaves if desired.
- Refrigerate the dessert for at least 2 hours, or until fully set.
- Serve:
- Slice the Peach Delight into squares and serve chilled.
