Ingredients:

For the Beef:
  • 1 pound beef sirloin or ribeye, thinly sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
For the Pasta:
  • 12 ounces penne pasta
  • 1 tablespoon olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small onion, sliced
  • 1 can (14.5 ounces) diced tomatoes
  • 1/4 cup beef broth
  • 1/4 cup heavy cream (optional for a creamier sauce)
  • 1/2 teaspoon red pepper flakes (optional for heat)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Grated Parmesan cheese (for serving)

Instructions:

  1. Cook the Pasta:
    • Bring a large pot of salted water to a boil. Add the penne pasta and cook according to the package instructions until al dente. Drain and set aside.
  2. Prepare the Beef:
    • In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
    • Add the thinly sliced beef and cook until browned on all sides. Season with salt, pepper, and Italian seasoning.
    • Add the minced garlic and cook for an additional minute. Remove the beef from the skillet and set aside.
  3. Cook the Vegetables:
    • In the same skillet, add 1 tablespoon of olive oil. Add the sliced bell peppers and onion. Cook until the vegetables are tender, about 5-7 minutes.
    • Add the can of diced tomatoes (with juice) and beef broth. Stir to combine.
    • Let the mixture simmer for about 5 minutes, allowing the flavors to meld together.
  4. Combine Everything:
    • Add the cooked beef back into the skillet with the vegetables.
    • Stir in the cooked penne pasta and mix until everything is well combined.
    • If using, add the heavy cream and stir to incorporate.
    • Season with red pepper flakes (if using), salt, and pepper to taste.
  5. Serve:
    • Garnish the dish with freshly chopped parsley and grated Parmesan cheese.
    • Serve hot and enjoy!
