Pineapple Parfait with Whipped Cream
Ingredients:
For the Pineapple Layer:
- 2 cups fresh pineapple, diced (or canned pineapple, drained)
- 1/4 cup granulated sugar
- 1 tablespoon lemon juice
For the Whipped Cream:
- 1 cup heavy whipping cream, cold
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
For Garnish:
- Toasted coconut flakes
- Maraschino cherries
- Fresh mint leaves (optional)
Instructions:
- Prepare the Pineapple Layer:
- In a medium saucepan, combine the diced pineapple, granulated sugar, and lemon juice.
- Cook over medium heat, stirring occasionally, until the pineapple is soft and the mixture has thickened slightly, about 10-15 minutes.
- Remove from heat and let it cool completely.
- Prepare the Whipped Cream:
- In a large mixing bowl, beat the heavy whipping cream with an electric mixer on medium-high speed until it starts to thicken.
- Add the powdered sugar and vanilla extract, and continue to beat until stiff peaks form. Be careful not to overbeat.
- Assemble the Parfaits:
- In serving glasses, layer the pineapple mixture and whipped cream alternately, starting with a layer of pineapple at the bottom.
- Continue layering until the glasses are filled, ending with a layer of whipped cream on top.
- Garnish and Serve:
- Sprinkle the top with toasted coconut flakes.
- Add a maraschino cherry and a fresh mint leaf on top for garnish.
Serve immediately and enjoy your refreshing pineapple parfaits!
