Potato Patties Recipe
Ingredients:
- 4 large potatoes, peeled and boiled
- 2 eggs
- 1/2 cup grated cheese (such as cheddar or mozzarella)
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped green onions
- 2 tablespoons flour
- Salt and pepper to taste
- 2-3 tablespoons vegetable oil for frying
Instructions:
- Prepare the Potatoes:
- Mash the boiled potatoes in a large mixing bowl until smooth.
- Mix the Ingredients:
- Add the eggs, grated cheese, chopped parsley, chopped green onions, flour, salt, and pepper to the mashed potatoes. Mix well until all ingredients are thoroughly combined.
- Shape the Patties:
- Take a handful of the potato mixture and shape it into a small patty. Repeat with the remaining mixture to form about 10-12 patties.
- Cook the Patties:
- Heat the vegetable oil in a large skillet over medium heat. Once hot, add the patties in batches, making sure not to overcrowd the skillet.
- Fry the patties for about 3-4 minutes on each side, or until they are golden brown and crispy.
- Serve:
- Remove the patties from the skillet and place them on a paper towel-lined plate to drain any excess oil.
- Serve the potato patties hot, garnished with additional chopped parsley if desired.
