Pulled Pork Taquitos

 

These Pulled Taquitos are filled with delicious Hawaiian pulled pork, grilled, then wrapped in a cheese tortilla and fried. It’s easy, delicious, and freezes well if you want to make more later.

Ingredients

No-bake spray sticks
3 and 1/2 pounds pork loin (also known as Boston Butt)
1/4 teaspoon salt (plus more for tortillas)
1 cup barbecue sauce
1/2 cup pineapple
2 tablespoons tablespoons brown sugar
1 tablespoon water
1 tablespoon garlic cloves
2 cups grated Mexican mixed cheese
6-8 inches flour (see notes)
sour cream, for serving
pico de gallo, for serving
Instructions
Rind and whole Remove fat (but not all) from pork and place in 6-quart oil pan; Sprinkle generously on both sides with salt.
In a mixing bowl, combine barbecue sauce, pineapple juice, brown sugar, watercress and garlic powder. Pour over pork and coat evenly.
Close the lid and cook on low heat for 8 hours.
Preheat oven to 400 degrees F. Line the baking tray with parchment paper.
Chop the cooked pork with two tablespoons of water. Then place it in a bowl with a slotted spoon or slotted spoon and let the excess water drain off.
Place about 1/3 cup ground beef and 3 tablespoons cheese on one-third of each tortilla. Roll them up and place them on the paper, one side down. Repeat with all the tortillas.
Spray a thin layer of cooking spray over the assembled taquitos and sprinkle lightly with salt.
Place in the oven and bake for 10-12 minutes or until golden brown and cheese melts.
Serve Taquitos hot with sour cream and pico de gallo.

Flour and Corn. You can replace the flour with cornstarch if you want, but make sure you get the good whole wheat variety, use fresh, and microwave it for a few seconds to soften it (only if necessary). You may need more since they are generally smaller than flour tortillas. And they like to cook quickly, so keep an eye on them in the oven.
