Ingredients:
For the Cheesecake Layer:
- 16 oz (450g) cream cheese, softened
- 1 cup powdered sugar
- 2 cups heavy whipping cream
- 1 teaspoon vanilla extract
For the Crust Layer:
- 1 1/2 cups graham cracker crumbs or crushed digestive biscuits
- 1/4 cup unsalted butter, melted
For the Cherry Topping:
- 1 can (21 oz) cherry pie filling
- Fresh cherries for garnish (optional)
Instructions:
- Prepare the Crust Layer:
- In a medium bowl, mix the graham cracker crumbs with the melted butter until well combined.
- Press the mixture into the bottom of your serving dish or trifle bowl to create the first layer.
- Prepare the Cheesecake Layer:
- In a large mixing bowl, beat the softened cream cheese and powdered sugar until smooth and creamy.
- In a separate bowl, whip the heavy cream and vanilla extract until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until well combined.
- Assemble the Trifle:
- Spread a layer of the cheesecake mixture over the crust layer in your serving dish.
- Spoon half of the cherry pie filling over the cheesecake layer.
- Repeat the layers, ending with a final layer of the cheesecake mixture.
- Top the trifle with the remaining cherry pie filling and garnish with fresh cherries, if desired.
- Sprinkle some extra graham cracker crumbs on top for added texture.
- Chill and Serve:
- Refrigerate the trifle for at least 2 hours or until set.
