Ingredients:

For the Cheesecake Layer:

  • 16 oz (450g) cream cheese, softened
  • 1 cup powdered sugar
  • 2 cups heavy whipping cream
  • 1 teaspoon vanilla extract

For the Crust Layer:

  • 1 1/2 cups graham cracker crumbs or crushed digestive biscuits
  • 1/4 cup unsalted butter, melted

For the Cherry Topping:

  • 1 can (21 oz) cherry pie filling
  • Fresh cherries for garnish (optional)

Instructions:

  1. Prepare the Crust Layer:
    • In a medium bowl, mix the graham cracker crumbs with the melted butter until well combined.
    • Press the mixture into the bottom of your serving dish or trifle bowl to create the first layer.
  2. Prepare the Cheesecake Layer:
    • In a large mixing bowl, beat the softened cream cheese and powdered sugar until smooth and creamy.
    • In a separate bowl, whip the heavy cream and vanilla extract until stiff peaks form.
    • Gently fold the whipped cream into the cream cheese mixture until well combined.
  3. Assemble the Trifle:
    • Spread a layer of the cheesecake mixture over the crust layer in your serving dish.
    • Spoon half of the cherry pie filling over the cheesecake layer.
    • Repeat the layers, ending with a final layer of the cheesecake mixture.
    • Top the trifle with the remaining cherry pie filling and garnish with fresh cherries, if desired.
    • Sprinkle some extra graham cracker crumbs on top for added texture.
  4. Chill and Serve:
    • Refrigerate the trifle for at least 2 hours or until set.
    • Serve chilled and enjoy!
