Roasted Chicken Breast with Baby Potatoes and Green Beans
Ingredients:
- 4 boneless, skinless chicken breasts
- 1 lb baby potatoes, washed and halved
- 1 lb green beans, ends trimmed
- 3 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- 1/2 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions:
Preparing:
- Preheat Oven: Set your oven to 400°F (200°C).
- Season Chicken: In a small bowl, mix 2 tablespoons olive oil, garlic, rosemary, thyme, paprika, salt, and pepper. Rub this mixture all over the chicken breasts.
- Prepare Vegetables: Toss the baby potatoes in 1 tablespoon of olive oil and season with salt and pepper. Do the same in a separate bowl for the green beans.
Cooking:
- Roast Chicken and Potatoes: Place the seasoned chicken and potatoes in a large baking dish. Make sure the potatoes are around the chicken and not underneath. Bake for about 25 minutes.
- Add Green Beans: After 25 minutes, add the green beans to the baking dish, distributing them evenly. Return the dish to the oven and roast for an additional 15 minutes, or until the chicken is cooked through and the vegetables are tender.
Serving:
- Garnish and Serve: Check the chicken’s doneness (internal temperature should be 165°F or 75°C). Garnish with fresh parsley before serving.

- Chicken Size: If the chicken breasts are very large, consider slicing them horizontally to make them thinner for more even cooking.
- Crispier Potatoes: For crispier potatoes, you can increase the oven temperature or extend their cooking time before adding the green beans.
