Salted Caramel Apple Bread Pudding
Ingredients:
- 6 cups cubed day-old bread (brioche or challah)
- 2 cups peeled and diced apples (Granny Smith or Honeycrisp)
- 4 large eggs
- 2 cups milk
- 1 cup heavy cream
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- Pinch of salt
For the Salted Caramel Sauce:
- 1 cup granulated sugar
- 1/4 cup water
- 1/2 cup heavy cream
- 2 tablespoons unsalted butter
- 1/2 teaspoon sea salt
Instructions:
- Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a large bowl, combine the cubed bread and diced apples. Toss to mix evenly.
- In another bowl, whisk together the eggs, milk, heavy cream, sugar, vanilla extract, cinnamon, and salt until well combined.
- Pour the egg mixture over the bread and apple mixture and stir to coat all the bread cubes. Let it sit for about 10 minutes to absorb the liquid.
- Transfer the mixture to the prepared baking dish and spread it out evenly.
- Bake for 45-50 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
- While the bread pudding is baking, prepare the salted caramel sauce. In a medium saucepan, combine the sugar and water over medium heat. Cook, stirring occasionally, until the sugar dissolves and turns a deep amber color.
- Carefully add the heavy cream (the mixture will bubble up) and stir until smooth. Remove from heat and stir in the butter and sea salt.
- Drizzle the salted caramel sauce over the warm bread pudding before serving.
