Ingredients

For the Filling:
  • 1 lb (450g) ground beef or chicken
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 medium carrot, grated
  • 1/2 cup (75g) cabbage, finely shredded (optional)
  • 2 tbsp olive oil or butter
  • 1 tsp paprika
  • 1/2 tsp ground cumin
  • Salt and pepper to taste
For the Pastry:
  • 10-12 sheets of phyllo dough (or spring roll wrappers)
  • 1/2 cup (120ml) melted butter or olive oil for brushing
For the Topping:
  • 1 egg, beaten (for egg wash)
  • Sesame seeds (optional, for garnish)

Instructions

Step 1: Prepare the Filling
  1. Heat olive oil in a skillet over medium heat. Add chopped onion and garlic; sauté until fragrant.
  2. Add the ground meat and cook until browned.
  3. Stir in the grated carrot and shredded cabbage (if using). Cook for 5-7 minutes until softened.
  4. Season with paprika, cumin, salt, and pepper. Mix well and let the filling cool completely.
Step 2: Assemble the Rolls
  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Lay a sheet of phyllo dough on a clean surface. Brush it lightly with melted butter or oil.
  3. Place 2-3 tablespoons of filling along one edge of the sheet. Fold the sides in and roll tightly to form a log. Repeat with the remaining dough and filling.
  4. Place the rolls seam-side down on the prepared baking sheet.
Step 3: Bake
  1. Brush the tops of the rolls with beaten egg for a golden finish. Sprinkle with sesame seeds if desired.
  2. Bake in the preheated oven for 20-25 minutes or until golden brown and crisp.

Tips

  • For Variations: Add cheese, herbs, or mashed potatoes to the filling for added flavor.
  • For Frying: Use spring roll wrappers instead of phyllo dough and deep-fry the rolls until golden brown.
  • Serving Suggestion: Serve warm with a dipping sauce like yogurt-garlic sauce, ketchup, or chili sauce.
