Ingredients:

  • 4 slices of bread (preferably a day or two old)
  • 3 large eggs
  • 1/4 cup milk
  • 1/4 cup chopped green onions
  • 2 tablespoons chopped fresh parsley
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons butter or oil for frying

Instructions:

  1. Prepare the Egg Mixture: In a mixing bowl, whisk together the eggs and milk. Stir in the chopped green onions, parsley, salt, and pepper.
  2. Soak the Bread: Dip each slice of bread into the egg mixture, allowing the bread to soak up the liquid for a few seconds on each side.
  3. Heat the Pan: Heat the butter or oil in a large skillet over medium heat.
  4. Cook the Toast: Place the soaked bread slices in the skillet. Cook for about 2-3 minutes on each side, or until the bread is golden brown and the egg is cooked.
  5. Serve: Serve the French toast hot. You can top it with more fresh herbs or a dollop of sour cream or yogurt if desired.
