Savory Vegetable Patties
Ingredients:
- 3 large potatoes, peeled and boiled
- 1 carrot, grated
- 1/2 cup green peas, cooked
- 1/2 cup corn kernels
- 1/2 bell pepper, finely chopped
- 1 small onion, finely chopped
- 2-3 green chilies, finely chopped (optional)
- 1/4 cup fresh coriander leaves, finely chopped
- 1 teaspoon ginger-garlic paste
- 1/2 teaspoon turmeric powder
- 1 teaspoon garam masala
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- Salt and pepper, to taste
- 1/2 cup breadcrumbs
- 2 tablespoons all-purpose flour
- 1-2 tablespoons water (if needed)
- Oil, for shallow frying
Instructions:
- Prepare the Potatoes:
- Mash the boiled potatoes in a large mixing bowl until smooth.
- Prepare the Vegetable Mixture:
- Add the grated carrot, cooked green peas, corn kernels, chopped bell pepper, chopped onion, green chilies (if using), and chopped coriander leaves to the mashed potatoes.
- Add the ginger-garlic paste, turmeric powder, garam masala, cumin powder, coriander powder, salt, and pepper. Mix everything well until all the ingredients are evenly distributed.
- Form the Patties:
- Add the breadcrumbs to the mixture to help bind the ingredients together. Mix well.
- If the mixture is too dry, add a little water to help it come together. If it’s too wet, add more breadcrumbs.
- Take a small portion of the mixture and shape it into a patty. Repeat with the remaining mixture.
- Coat the Patties:
- In a small bowl, mix the all-purpose flour with a little water to make a thick paste.
- Lightly coat each patty with the flour paste.
- Fry the Patties:
- Heat oil in a large skillet over medium heat. Once hot, add the patties in batches and shallow fry them until golden brown and crispy on both sides, about 3-4 minutes per side.
- Remove the patties from the skillet and drain on paper towels to remove any excess oil.
- Serve:
- Serve the savory vegetable patties hot with your favorite dipping sauce or chutney.

- You can customize these patties by adding other vegetables like spinach, beetroot, or zucchini.
