Seared Beef Tips with Creamy Mashed Potatoes
Ingredients:
For the Beef Tips:
- 1 1/2 lbs (680g) beef tenderloin or sirloin, cut into bite-sized pieces
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/4 cup (60ml) soy sauce
- 1/4 cup (60ml) Worcestershire sauce
- 1/4 cup (60ml) beef broth
- 2 tablespoons balsamic vinegar
- 2 tablespoons brown sugar
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
For the Creamy Mashed Potatoes:
- 2 lbs (900g) russet potatoes, peeled and cut into chunks
- 1/2 cup (120ml) heavy cream
- 1/4 cup (60ml) whole milk
- 1/4 cup (60g) unsalted butter
- Salt and pepper to taste
Instructions:
Prepare the Mashed Potatoes:
- Boil the Potatoes:
- Place the peeled and chopped potatoes in a large pot of salted water. Bring to a boil and cook until the potatoes are tender, about 15-20 minutes.
- Mash the Potatoes:
- Drain the potatoes and return them to the pot. Add the heavy cream, milk, and butter. Mash until smooth and creamy. Season with salt and pepper to taste. Keep warm.
Prepare the Beef Tips:
- Marinate the Beef:
- In a medium bowl, combine the minced garlic, soy sauce, Worcestershire sauce, beef broth, balsamic vinegar, and brown sugar. Add the beef tips and marinate for at least 30 minutes.
- Sear the Beef:
- Heat the olive oil in a large skillet over medium-high heat. Remove the beef from the marinade (reserve the marinade) and sear the beef tips in the hot skillet until browned on all sides, about 3-5 minutes. Remove the beef from the skillet and set aside.
- Make the Sauce:
- In the same skillet, pour in the reserved marinade. Bring to a boil, then reduce the heat and simmer until the sauce thickens slightly, about 5-7 minutes.
- Combine the Beef and Sauce:
- Return the seared beef tips to the skillet, tossing to coat them in the sauce. Cook for an additional 2-3 minutes, or until the beef is cooked to your desired doneness.
Serve:
- Plate the Dish:
- Spoon the creamy mashed potatoes onto a serving plate. Top with the seared beef tips and spoon the sauce over the top.
- Garnish:
- Garnish with freshly chopped parsley and serve immediately.
