Ingredients
- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 1 cup buttermilk
- 1/3 cup melted butter
- 1 tablespoon vegetable oil (for greasing the skillet)
Instructions
- Preheat the Oven and Skillet:
- Preheat your oven to 400°F (204°C).
- Place a 10-inch cast iron skillet inside to heat while you make the batter.
- Mix Dry Ingredients:
- In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
- Mix Wet Ingredients:
- In another bowl, beat the eggs, buttermilk, and melted butter together.
- Combine Wet and Dry Ingredients:
- Make a well in the center of the dry ingredients, and pour in the wet ingredients. Stir until just combined; do not overmix.
- Prepare the Skillet:
- Carefully remove the hot skillet from the oven (using oven mitts). Add the vegetable oil and swirl to coat the bottom and sides of the skillet.
- Bake:
- Pour the batter into the hot skillet. Return the skillet to the oven and bake for 20-25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Serve:
- Let the cornbread cool slightly before slicing and serving. It’s great with butter, honey, or as a side to your favorite meals.
