Ingredients

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup buttermilk
  • 1/3 cup melted butter
  • 1 tablespoon vegetable oil (for greasing the skillet)

Instructions

  1. Preheat the Oven and Skillet:
    • Preheat your oven to 400°F (204°C).
    • Place a 10-inch cast iron skillet inside to heat while you make the batter.
  2. Mix Dry Ingredients:
    • In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
  3. Mix Wet Ingredients:
    • In another bowl, beat the eggs, buttermilk, and melted butter together.
  4. Combine Wet and Dry Ingredients:
    • Make a well in the center of the dry ingredients, and pour in the wet ingredients. Stir until just combined; do not overmix.
  5. Prepare the Skillet:
    • Carefully remove the hot skillet from the oven (using oven mitts). Add the vegetable oil and swirl to coat the bottom and sides of the skillet.
  6. Bake:
    • Pour the batter into the hot skillet. Return the skillet to the oven and bake for 20-25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  7. Serve:
    • Let the cornbread cool slightly before slicing and serving. It’s great with butter, honey, or as a side to your favorite meals.
