Skillet Cornbread
Ingredients:
- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
- 2 large eggs
- 1/2 cup unsalted butter, melted
- 1/2 cup whole milk
- 2 tablespoons vegetable oil
Instructions:
- Preheat the Oven:
- Preheat your oven to 425°F (220°C). Place a 9- or 10-inch cast-iron skillet in the oven to heat while you prepare the batter.
- Prepare the Batter:
- In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the buttermilk, eggs, melted butter, and whole milk until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Heat the Skillet:
- Carefully remove the hot skillet from the oven. Add the vegetable oil to the skillet and swirl to coat the bottom and sides.
- Bake the Cornbread:
- Pour the batter into the hot skillet, spreading it evenly. The batter should sizzle when it hits the hot skillet.
- Return the skillet to the oven and bake for 20-25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Serve:
- Allow the cornbread to cool in the skillet for a few minutes before slicing and serving. Serve warm with butter, honey, or your favorite topping.
