  • Microgreens

Instructions

Step 1: Prepare the Avocado Mousse

  1. In a bowl, mash the avocados until smooth.
  2. Add lime juice, olive oil, chopped dill, salt, and pepper. Mix well until creamy. For extra smoothness, blend in a food processor.
  3. Chill in the fridge for 10-15 minutes.

Step 2: Assemble the Dish

  1. Using a round food ring or mold, layer the avocado mousse at the bottom and press lightly to compact.
  2. Arrange the smoked salmon slices on top, folding them into delicate waves for a stylish look.

Step 3: Garnish

  1. Drizzle olive oil over the salmon and sprinkle with chili flakes and/or capers, if desired.
  2. Garnish with fresh dill or chives and a light sprinkle of matcha powder for visual effect.

Step 4: Serve

  1. Carefully remove the food ring/mold and serve as an appetizer or light entrée.
  2. Pair with toasted bread, crackers, or a light salad.

Tips:

  • Substitute smoked salmon with sushi-grade raw salmon for a tartare variation.
  • Add a dollop of crème fraîche or sour cream on top for a creamy twist.
  • Serve with lemon wedges for added freshness.
