Southern Fried Zucchini Rounds

 

Crispy on the outside, tender on the inside — these Southern-style zucchini rounds are a golden, savory treat that pair perfectly with any meal. Simple to make and packed with flavor, they’re a true Southern classic that’s sure to become a family favorite.

Ingredients

2 medium zucchini, sliced into ½-inch rounds

1 cup all-purpose flour

2 large eggs

½ cup milk or buttermilk

1 cup seasoned breadcrumbs (or crushed crackers)

½ teaspoon garlic powder

½ teaspoon paprika

¼ teaspoon black pepper

Oil for frying (vegetable or canola)

Grated Parmesan cheese (optional, for garnish)

Instructions

1. Prepare the zucchini

Slice the zucchini into even rounds and pat dry with paper towels to remove excess moisture.

 

2. Set up the dredging station

Place flour in one bowl.

In another bowl, whisk together eggs and milk.

In a third bowl, combine breadcrumbs, garlic powder, paprika, salt, and pepper.

 

3. Coat the zucchini

Dip each slice into flour, then egg mixture, then breadcrumbs — making sure each piece is fully coated.

4. Fry until golden

Heat oil in a skillet over medium heat.

Fry zucchini slices in batches for 2–3 minutes per side, or until golden brown and crisp.

Transfer to a paper towel–lined plate to drain excess oil.

5. Serve

Sprinkle lightly with Parmesan cheese if desired and serve warm with ranch or marinara sauce for dipping.

Tips

For a lighter version, you can bake them at 425°F (220°C) for 20–25 minutes, flipping halfway through.

 

Add a pinch of cayenne pepper or hot sauce to the egg mixture for a little heat.

Best served immediately while crisp and warm.
