Ingredients
2 medium zucchini, sliced into ½-inch rounds
1 cup all-purpose flour

2 large eggs
½ cup milk or buttermilk
1 cup seasoned breadcrumbs (or crushed crackers)
½ teaspoon garlic powder
½ teaspoon paprika

¼ teaspoon black pepper
Oil for frying (vegetable or canola)

Instructions
1. Prepare the zucchini
Slice the zucchini into even rounds and pat dry with paper towels to remove excess moisture.
2. Set up the dredging station

Place flour in one bowl.
In another bowl, whisk together eggs and milk.
In a third bowl, combine breadcrumbs, garlic powder, paprika, salt, and pepper.
3. Coat the zucchini
Dip each slice into flour, then egg mixture, then breadcrumbs — making sure each piece is fully coated.
4. Fry until golden
Heat oil in a skillet over medium heat.
Fry zucchini slices in batches for 2–3 minutes per side, or until golden brown and crisp.

Tips
For a lighter version, you can bake them at 425°F (220°C) for 20–25 minutes, flipping halfway through.
