Spicy Stir-Fried Noodles with Ground Meat and Vegetables

 

Ingredients:

  • Noodles: 250g wide rice noodles or egg noodles
  • Ground meat: 200g ground pork, beef, or chicken
  • Vegetables:
    • 1 red bell pepper, diced
    • 1 green bell pepper, diced
    • 1 carrot, julienned
    • 1 onion, finely chopped
    • 2-3 cloves garlic, minced
    • 1-inch ginger, minced
  • Sauce:
    • 2 tbsp soy sauce
    • 1 tbsp oyster sauce
    • 1 tbsp hoisin sauce
    • 1-2 tsp chili paste or flakes (adjust according to your spice preference)
    • 1 tsp sugar
    • 1 tbsp rice vinegar or lime juice
  • Garnish:
    • Sliced green onions
    • Sesame seeds (optional)

Instructions:

  1. Cook the noodles: Cook the noodles according to the package instructions until they are al dente. Drain and set aside.
  2. Prepare the sauce: In a small bowl, mix together soy sauce, oyster sauce, hoisin sauce, chili paste, sugar, and rice vinegar or lime juice. Set aside.
  3. Cook the meat: Heat a large pan or wok over medium heat. Add a little oil, then add the ground meat. Cook until browned, breaking it up into small pieces as it cooks. Once cooked, remove from the pan and set aside.
  4. Cook the vegetables: In the same pan, add a bit more oil if needed. Add the chopped onion, garlic, and ginger. Stir-fry for about 1-2 minutes until fragrant. Add the bell peppers and carrot, and stir-fry for another 3-4 minutes until they are slightly tender but still crisp.
  5. Combine and stir-fry: Add the cooked ground meat back into the pan with the vegetables. Pour in the sauce and stir everything together. Let it cook for another 2-3 minutes, allowing the flavors to meld together.
  6. Add the noodles: Add the cooked noodles to the pan, tossing everything together until the noodles are well coated in the sauce and heated through.
  7. Garnish and serve: Remove from heat and garnish with sliced green onions and sesame seeds if using. Serve hot.
