Spicy Stir-Fried Noodles with Ground Meat and Vegetables
Ingredients:
- Noodles: 250g wide rice noodles or egg noodles
- Ground meat: 200g ground pork, beef, or chicken
- Vegetables:
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 carrot, julienned
- 1 onion, finely chopped
- 2-3 cloves garlic, minced
- 1-inch ginger, minced
- Sauce:
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp hoisin sauce
- 1-2 tsp chili paste or flakes (adjust according to your spice preference)
- 1 tsp sugar
- 1 tbsp rice vinegar or lime juice
- Garnish:
- Sliced green onions
- Sesame seeds (optional)
Instructions:
- Cook the noodles: Cook the noodles according to the package instructions until they are al dente. Drain and set aside.
- Prepare the sauce: In a small bowl, mix together soy sauce, oyster sauce, hoisin sauce, chili paste, sugar, and rice vinegar or lime juice. Set aside.
- Cook the meat: Heat a large pan or wok over medium heat. Add a little oil, then add the ground meat. Cook until browned, breaking it up into small pieces as it cooks. Once cooked, remove from the pan and set aside.
- Cook the vegetables: In the same pan, add a bit more oil if needed. Add the chopped onion, garlic, and ginger. Stir-fry for about 1-2 minutes until fragrant. Add the bell peppers and carrot, and stir-fry for another 3-4 minutes until they are slightly tender but still crisp.
- Combine and stir-fry: Add the cooked ground meat back into the pan with the vegetables. Pour in the sauce and stir everything together. Let it cook for another 2-3 minutes, allowing the flavors to meld together.
- Add the noodles: Add the cooked noodles to the pan, tossing everything together until the noodles are well coated in the sauce and heated through.
- Garnish and serve: Remove from heat and garnish with sliced green onions and sesame seeds if using. Serve hot.
