Spiral Brioche Rolls

 

Ingredients:

  • 3 1/2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 1/4 teaspoons (1 packet) active dry yeast
  • 1 teaspoon salt
  • 1/2 cup whole milk, warmed to about 110°F
  • 4 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup unsalted butter, softened and cut into pieces
  • 1 egg, beaten (for egg wash)

Instructions:

  1. Activate the Yeast:
    • In a small bowl, combine the warm milk, sugar, and yeast. Let it sit for about 5-10 minutes until it becomes frothy.
  2. Mix the Dough:
    • In a large mixing bowl, combine the flour and salt.
    • Add the frothy yeast mixture, eggs, and vanilla extract to the flour mixture. Mix until a dough begins to form.
  3. Knead the Dough:
    • If using a stand mixer, knead on medium speed for about 10 minutes. If kneading by hand, turn the dough out onto a floured surface and knead for about 15 minutes until the dough is smooth and elastic.
  4. Incorporate the Butter:
    • Gradually add the softened butter, a few pieces at a time, kneading until fully incorporated before adding more. Continue kneading until all the butter is incorporated and the dough is smooth and shiny.
  5. First Rise:
    • Place the dough in a greased bowl, cover with plastic wrap or a clean kitchen towel, and let it rise in a warm place for about 1 1/2 to 2 hours, or until doubled in size.
  6. Shape the Rolls:
    • Punch down the dough and turn it out onto a floured surface. Roll the dough into a large rectangle, about 1/4 inch thick.
    • Cut the dough into long strips, about 1 inch wide. Roll each strip into a spiral shape and place them on a parchment-lined baking sheet.
  7. Second Rise:
    • Cover the rolls with a kitchen towel and let them rise for another 30-45 minutes, or until puffed up.
  8. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  9. Egg Wash:
    • Brush the tops of the rolls with the beaten egg to give them a glossy finish.
  10. Bake the Rolls:
    • Bake in the preheated oven for 15-20 minutes, or until golden brown and baked through.
  11. Cool and Serve:
    • Allow the rolls to cool slightly on a wire rack before serving.
