Strawberry Cheesecake Crumble

Ingredients:

For the cheesecake layer:

  • 500 grams of cream cheese, softened
  • 200 grams of granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

For the crumble topping:

  • 150 grams all-purpose flour
  • 100 grams granulated sugar
  • 100 grams unsalted butter, cold and cubed
  • A pinch of salt

For the strawberry topping:

  • 500 grams fresh strawberries, hulled and halved
  • 100 grams granulated sugar
  • 2 tablespoons cornstarch
  • Juice of 1 lemon

Instructions:

Preparing the strawberry topping:

  1. In a saucepan, combine strawberries, sugar, cornstarch, and lemon juice. Cook over medium heat until the strawberries release their juices and the mixture thickens, about 10 minutes. Set aside to cool.

Making the cheesecake layer:

  1. Preheat the oven to 175°C (350°F).
  2. In a bowl, mix the cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  3. Pour the mixture into a greased baking dish.

Preparing the crumble:

  1. In another bowl, mix flour, sugar, and salt. Add the cold butter and rub it into the flour mixture with your fingers until it resembles coarse crumbs.

Assembling the dish:

  1. Spoon the cooled strawberry mixture over the cheesecake layer evenly.
  2. Sprinkle the crumble topping over the strawberries.
  3. Bake in the preheated oven for 40-45 minutes, or until the crumble is golden brown and the cheesecake is set.

Serving:

  1. Let cool before serving. Optionally, dust with powdered sugar or serve with a dollop of whipped cream.
