Ingredients:

For the Lemon Buttermilk Cake:

  • 1 1/2 cups powdered sugar

  • 2–3 tbsp fresh lemon juice

For Garnish:

  • Fresh strawberries

  • Lemon slices

  • Mint leaves (optional)


Instructions:

  1. Prepare the Cake Layers:
    Preheat oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
    In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
    In a separate bowl, combine buttermilk, lemon juice, lemon zest, and vanilla.
    In a large bowl, cream the butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition.
    Alternately add dry ingredients and the buttermilk mixture to the butter mixture, beginning and ending with flour.
    Divide the batter evenly between the pans and bake for 22–26 minutes or until a toothpick comes out clean. Cool completely.

  2. Make the Strawberry Filling:
    In a small saucepan, combine strawberries, sugar, lemon juice, and cornstarch. Cook over medium heat, stirring until thickened (5–7 minutes). Cool completely before using.

  3. Prepare the Lemon Glaze:
    In a bowl, whisk together powdered sugar, lemon juice, lemon zest, and milk until smooth and pourable. Add more sugar for a thicker glaze, or more lemon juice to thin it out.

  4. Assemble the Cake:
    Place one cake layer on a serving plate. Spread a generous amount of strawberry filling over it. Repeat with the second layer, then top with the final cake layer.
    Pour the lemon glaze over the top, letting it drip beautifully down the sides. Garnish with fresh strawberries and lemon slices.
