Ingredients:

  • 4 large potatoes
  • 200g ground beef
  • 1 small onion, chopped
  • 1 carrot, diced
  • 1 bell pepper, chopped (optional)
  • 2 garlic cloves, minced
  • 1 tablespoon tomato paste
  • 1 teaspoon olive oil or butter
  • 100g shredded mozzarella or cheddar cheese
  • Salt and pepper to taste
  • Dried herbs (e.g., oregano, thyme) for seasoning

Instructions:

  1. Bake the Potatoes:
    • Preheat your oven to 200°C (390°F).
    • Wash the potatoes, pierce them with a fork, and bake for about 40-50 minutes until tender.
  2. Prepare the Beef Filling:
    • Heat oil in a pan and sauté the onions and garlic until soft.
    • Add the ground beef and cook until browned.
    • Stir in the diced carrots, bell pepper, and tomato paste.
    • Season with salt, pepper, and dried herbs.
    • Cook for another 5-7 minutes until the mixture is well combined and the vegetables are soft.
  3. Stuff the Potatoes:
    • Remove the potatoes from the oven and cut them in half lengthwise.
    • Scoop out a small portion from the center of each potato to create a well.
    • Fill each potato with the prepared ground beef mixture.
  4. Top with Cheese:
    • Sprinkle shredded cheese generously over each stuffed potato.
    • Return to the oven and bake for an additional 10-15 minutes until the cheese is melted and golden.
  5. Serve:
    • Let the potatoes cool for a few minutes before serving.
    • Garnish with fresh herbs or a dollop of sour cream if desired.
