Stuffed Baked Potatoes with Ground Beef and Cheese
Ingredients:
- 4 large potatoes
- 200g ground beef
- 1 small onion, chopped
- 1 carrot, diced
- 1 bell pepper, chopped (optional)
- 2 garlic cloves, minced
- 1 tablespoon tomato paste
- 1 teaspoon olive oil or butter
- 100g shredded mozzarella or cheddar cheese
- Salt and pepper to taste
- Dried herbs (e.g., oregano, thyme) for seasoning
Instructions:
- Bake the Potatoes:
- Preheat your oven to 200°C (390°F).
- Wash the potatoes, pierce them with a fork, and bake for about 40-50 minutes until tender.
- Prepare the Beef Filling:
- Heat oil in a pan and sauté the onions and garlic until soft.
- Add the ground beef and cook until browned.
- Stir in the diced carrots, bell pepper, and tomato paste.
- Season with salt, pepper, and dried herbs.
- Cook for another 5-7 minutes until the mixture is well combined and the vegetables are soft.
- Stuff the Potatoes:
- Remove the potatoes from the oven and cut them in half lengthwise.
- Scoop out a small portion from the center of each potato to create a well.
- Fill each potato with the prepared ground beef mixture.
- Top with Cheese:
- Sprinkle shredded cheese generously over each stuffed potato.
- Return to the oven and bake for an additional 10-15 minutes until the cheese is melted and golden.
- Serve:
- Let the potatoes cool for a few minutes before serving.
- Garnish with fresh herbs or a dollop of sour cream if desired.
