Stuffed Baked Rigatoni

 

 

 

Ingredients:

For the Rigatoni and Filling:

  • 1 lb (450g) rigatoni pasta
  • 1 lb (450g) ground beef (or a mix of beef and pork)
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste

For the Sauce:

  • 2 cups marinara sauce (homemade or store-bought)
  • 1/4 tsp red pepper flakes (optional, for spice)
  • 1/2 tsp sugar (to balance the acidity)

For Assembly:

  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped, for garnish

Instructions:

  1. Cook the Rigatoni:
    • Boil the rigatoni in salted water until just al dente (slightly firm). Drain and rinse with cold water. Set aside.
  2. Prepare the Meat Filling:
    • Heat a skillet over medium heat and sauté the onion and garlic until softened.
    • Add the ground beef and cook until browned. Drain excess fat and let cool slightly.
    • In a bowl, combine the cooked meat, breadcrumbs, egg, Parmesan cheese, oregano, basil, salt, and pepper. Mix well to form a cohesive filling.
  3. Stuff the Rigatoni:
    • Using a small spoon or piping bag, fill each piece of rigatoni with the meat mixture. Set the stuffed pasta aside.
  4. Prepare the Sauce:
    • In a saucepan, heat the marinara sauce. Add red pepper flakes and sugar for extra flavor. Simmer for a few minutes, then remove from heat.
  5. Assemble the Dish:
    • Preheat your oven to 375°F (190°C).
    • Spread a thin layer of marinara sauce on the bottom of a baking dish.
    • Arrange the stuffed rigatoni in a single layer on top of the sauce.
    • Pour the remaining marinara sauce evenly over the pasta.
    • Sprinkle mozzarella and Parmesan cheese on top.
  6. Bake:
    • Cover the dish with foil and bake for 20 minutes.
    • Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  7. Garnish and Serve:
    • Sprinkle with fresh parsley before serving.
    • Serve hot with a side of garlic bread or a fresh salad.
