Stuffed Chicken Breast with Mushroom Sauce
Ingredients:
- For the chicken:
- 4 boneless, skinless chicken breasts
- 1 cup shredded mozzarella or Gruyère cheese
- 1 cup sautéed mushrooms (reserve a few for the sauce)
- 1/4 cup cream cheese
- 2 garlic cloves, minced
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp smoked paprika (optional)
- 2 tbsp olive oil
- For the mushroom sauce:
- 2 tbsp unsalted butter
- 1 cup sliced mushrooms
- 2 garlic cloves, minced
- 1/2 cup chicken stock
- 1/2 cup heavy cream
- 1 tsp Dijon mustard
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
- Prepare the Filling:
- In a bowl, mix shredded cheese, sautéed mushrooms, cream cheese, and garlic. Season with a pinch of salt and pepper.
- Stuff the Chicken:
- Preheat your oven to 375°F (190°C).
- Slice a pocket into each chicken breast, being careful not to cut all the way through.
- Fill the pocket with the cheese and mushroom mixture and secure with toothpicks.
- Sear the Chicken:
- Heat olive oil in an oven-safe skillet over medium-high heat.
- Season the chicken with salt, pepper, and paprika. Sear each side for 3-4 minutes until golden brown.
- Bake the Chicken:
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
- Prepare the Mushroom Sauce:
- In a separate skillet, melt butter over medium heat. Add sliced mushrooms and garlic, and sauté until softened.
- Deglaze the pan with chicken stock, scraping up any browned bits.
- Stir in heavy cream and Dijon mustard. Simmer for 5 minutes until the sauce thickens.
- Season with salt and pepper to taste.
- Assemble the Dish:
- Remove the toothpicks from the chicken and place it on a serving plate.
- Pour the mushroom sauce over the chicken and garnish with fresh parsley.
- Serve:
- Serve warm with a side of mashed potatoes, roasted vegetables, or a fresh salad.
